Banana Pancakes. Hmm…

Today I’m sharing the 2nd of my favorite Beans and Rice Recipes! Dave Ramsey always says, “Beans and rice, rice and beans!” So, true to form, I did my best to find some recipes that I could make as cheaply as possible and gluten free to boot! If you are like me and want to pay off a mountain of debt ($94,000 for us-ugh) I think you will like these tasty, healthy recipes! If you have some you’d like to share, I’d love more ideas! How to Make Banana Pancakes

Alright, now normally I would have a long explanation to tell you how to do this or that, but really, this is the easiest recipe in the world.

Prep: 5 min                         Cook: 10-15 min               Ready in: 15-20 min

Ingredients:

  • 1 ripe banana
  • 2 eggs

Directions:

  1. Mash and mix
  2. Grease a pan
  3. Make pancakes!
  4. Top with favorite toppings.

I will add that I like to heat the pan up with butter rather than coconut oil. There’s just something about the flavor combination that I dislike with banana and coconut…weird, I know.

Optional additional ingredients:

  • Cinnamon
  • Vanilla
  • Pumpkin puree and pumpkin spice

Tips:

  • These come out pretty thin so make double or triple batches depending on the size of your family.

I just love that these banana pancakes are an easy Gluten-Free recipe. Most GF recipes have 20 different alternative flours and additives to make it taste good and stick together. This is my kind of cooking!

The hubby and I will top our banana pancakes with pure maple syrup and butter (we heat the two together in a saucepan and pour over the pancakes-delicious!) If we have any kind of jam or fruit butter around, we will use that too because, all too often we have jam but no bread to use it on. Pancakes definitely makes up for that.
